SAFFRON PUDDING / SHOLEH ZARD


                           SHOLEH ZARD / SAFFRON PUDDING


The name itself suggest - a perfect dessert for CHRISTMAS .
It is an IRANIAN sweet dish made with rice , saffron & sugar with  water . A taste bud pleasing dessert must try .

INGREDIENTS- 
2 cups - RICE
4 cups - SUGAR 
1 tblspn - ALMOND 
1 tblspn - ROSEWATER 
1 tblspn - SAFFRON 
1 tblspn - GREEN CARDAMOM
50 gm - BUTTER 
1 teaspoon - CINNAMON  POWDER 
1 teaspoon - CASTER SUGAR 

INSTRUCTIONS - 
*Put rice in a cooking vessel with 6 cups of WATER , cook on low heat for atleast 1 hour . It will look like this ....

*After 1 hour add sugar & cook for 1/2 hour so the sugar is absorbed . Stir continuously so sugar do not stick .

*After this add ALMOND chopped & stir it to mix well .

*Now add SAFFRON water  [ soaked in warm water ] .You will see a beautiful colour will come.

*Add CARDAMOM , BUTTER , & stir again until butter melts .

*Lastly add ROSEWATER for an amazing aroma which will make your mood .

*Close the vessel with lid to give some steam for 5 minutes .
