These ADANA KEBAB are originally from the kitchen of OTTOMAN EMPIRE from TURKEY .
This TURKISH  KEBAB cuisine is very close to INDIAN cuisine both use lots of spices & grilled on charcoal .
These KEBABS are very rich in flavours & calories but  don't worry they will please your taste buds & make you forget all the calories.


INGREDIENTS REQUIRED -
1 KG - LAMB KEEMA 
2 tblspn - RED CHILI FLAKES 
2 tblspn - CUMIN SEEDS 
2 tblspn - BLACK PEPPER 
SALT - to taste 
1 bowl - ONION - GREEN CHILI [ FINELY CHOPPED]
1 tblspn - TURMERIC POWDER 
1 tblspn - WHOLE SPICE POWDER [GARAM MASALA]

INSTRUCTIONS  - 

*In a large mixing bowl add LAMB KEEMA  with some meat fat to make it juicier .

*Then add ONION - GREEN CHILI finely chopped & mix them well .

*Then add all the ingredients in it - RED CHILI FLAKES , CUMIN SEEDS , BLACK PEPPER , SALT , TURMERIC POWDER , WHOLE SPICE POWDER as quantity mentioned above or as per your requirements . Mix all the things very well .

**Cover & put in fridge overnight . Not  necessary to put overnight but should be put for atleast 3 hours so the meat absorb all the flavours .

*Before you start cooking add SUMAC & LEMON JUICE & REST FOR 15 MINUTES .

*Your KEEMA is ready to GRILL on CHARCOAL . 

**Take SKEWERS & take a ball of meat & string it in the skewers & press gently to spread it to atleast 5 inches .

*Also string a piece of TOMATO on skewers & grill all your skewers covered meat for atleast 3 minutes from each side .

*Take off your kebab very gently so  it doesn't break & be in one piece .

YOUR DELICIOUS ADANA KEBAB ARE READY TO SERVE WITH YOGURT & NAAN [INDIAN BREAD ] . YOU CAN ALSO TAKE * TORTIYA & PUT KEBEB IN BETWEEN & ENJOY .................................................................................
