TAHARI


TAHIRI / TAHARI RECIPE-

Tehari recipe also called tahari or tahiri by some is mixture of DECCAN and AWADHI  cuisine .
  Hyderabadi Nizams and Awadhi Nawabs have this dish in there menu .This main course dish  is quiet popular in Indian and Pakistani homes. 

             It is a Pulao kind of dish that used to be made on any day of the week or even for a dinner party for family and friends.

          Tahari is a blend of many spices , meat and vegetables and you can enhance its taste by putting plain curd or onion-cucumber  raita or bundi raita as a side dish.
     
           A strange thing about this dish is that a slightly burnt portion of tahari from the bottom called Khurchan is very yum to have, its crunchiness can  please your  taste buds.
          
                                  Here is the recipe and method of cooking Tahari.



     INGREDIENTS REQUIRED:

     1/2 Kg - Basmati rice [soak in water for 1 hour]                                                                                          1/2Kg- Mutton keema                                                                      
          200 gm-Black Urad dal [soak in water with rice]                                                                                       1/2Kg - Tomatoes
          100 gm- green chillies                                                                                                                                1tbspn- Haldi/ Turmeric powder                                                           


       1 tbspn-Coriender powder
       1 tbspn- red chilli powder
            1 tbspn- garam masala
            1 tbspn- mango pickle/ achaar
            2 tbspn- ginger garlic paste
             Salt- to taste
            1- Potato


       [1 tblspn = 2 and 1/2 of regular eating spoon]

Method of cooking-    

            COOKING TIME- 30-40 MINUTES

1. In a pressure cooker add vegetable oil or ghee as required .
2 . Add in it keema and all spices .
3. Cook it till 5-6 whistles in pressure cooker.
4. After 5-6 whistles open pressure cooker and add 750 ml water and add all the vegetables  [ chop all the vegetables roughly , fine chopping is not required].
5. Add salt to taste , mango pickle / achaar ka masala.
6. After it, add rice, urad daal and potato/aaloo.
7. Wait till 2 whistle and then slow down the flame for 5 minutes.
8. Open the pressure cooker after 5 minutes and your TAHARI is ready to surve.

            ⧪   Garnish it with fresh coriender leaves or fried brown onions.
  
⧪⧪ You can surve plain curd or onion raita or bundi ka raita as a side dish to enhance the taste.                                                                                                    


            Healthy tip- You can also add carrot and peas to the dish to enhance its nutritive value and colour combination to make it more appetizing.
