Mutton Nihari Recipe is a slow-cooked meat cooked along with bone marrow. Nihari is very popular in Awadhi cuisine.Nihari is considered a heavy dish to digest, hence it is best eaten early in the morning so the entire day is available to the body for digestion.Nihari is very popular in INDIAN & PAKISTANI muslim homes.Nihari can be made with mutton & beef .

INGREDIENTS REQUIRED -
1 KG - MUTTON
400gM- OIL
3 - ONION [ FRIED]
2 TBLSPN - GINGER PASTE
2 TBLSPN - GARLIC PASTE
1 tblspn - RED CHILI POWDER
4 tblspn - CORIENDER POWDER
1/2 tblspn - TURMERIC
1 tbspn -POWDER WHOLE SPICES [ GARAM MASALA]
1 CUP - CURD , SALT - to taste

➤ THESE SPICES ARE TAKEN RAW & GRINDED IN THE MIXTURE , here are your raw spices-
   1 tblspn - NUTMEG & MACE[JAYPHAL-JAWITRI]] , WHOLE SPICES [ GARAM MASALA ] , CORIENDER [DHANIA ].

                 INSTRUCTIONS-
 1. heat oil in a pressure cooker , after it fry the onions in it & take out the onion.
 2. put all the spices - ginger - garlic pastes , red chili powder ,  coriender powder , turmeric [ haldi] , whole spices powder [garam masala ] , salt , curd.
 3. saute the spices for 5  minutes .
 4. after 5 minutes add mutton in the pressure cooker & 4 glasses of water until 4-5 whistles.
 5. after 4-5 whistles low the flame for 5 minutes .
 6. open the pressure cooker add the grinded spice powder we have made earlier & mix it well .
 7. 3 tblspn - fine flour [ maida] mix it with 1 cup of water & add it in the pressure cooker & mix it well .
 8. now add fried onions by crushing & mix it well .
 9. close the pressure cooker & cook for 10 minutes on medium flame.
